Years of fussing with fermentations of unconventional fruits using traditional wine making processes, yielded this uncompromising beauty. Harnessing the intense flavor and sweetness of the specific variety of crab apples grown on the home block on Naramata Road are counterbalanced through the application of skin contact (in the tradition of crafting fine rosé) to draw out the un-parallelled tartness of the crab apple skin.
