Blanc de Blancs
Méthode Traditionelle Sparkling Wine
Luxurious and profound. Made entirely from select estate Chardonnay grapes, this wine has been aged, after bottle fermentation, for 5 years on lees to add complexity. It was disgorged in June 2020. This wine is the epitome of the paradox of our elephant ... an elephant that is as light on his feet as Fred Astaire , with moves like Jagger ... and the elegance of Cary Grant. A light golden hue, a nose of lemon curds, apple turnovers, roasted nuts, and just enough brioche. It is precise yet dreamy, clean and complex with autolytic flavours and a buttery lemon flavoured finish.
Only 2.5 tons picked at 16 brix to retain the high acid. Our Chardonnay grapes are one of the oldest own-rooted vines on the Naramata Bench.
Only 954 bottles produced.
